Our signature restaurant draws its inspiration from the roots of Maui’s history and culture. Starting with the dining room design, eflective of a traditional canoe hale, the restaurant’s name gives tribute to the island’s past. “Cane” represents food harvested from the land or mountain – mauka – and pays tribute to Maui’s history of sugar cultivation, while “canoe” represents ingredients fished from the sea – makai – long a staple of the Hawaiians.
