Merriman’s Kapalua is located at the former Bay Club, in the Kapalua Resort. Peter’s culinary approach focuses on fresh foods–and authenticity within flavors unique to each dish: Chef Peter Merriman pioneered Hawaii Regional Cuisine and has received numerous awards, from the Maui Agriculture Award to being selected as a three-time finalist for Best Chef, Northwest and Hawaii, by the prestigious James Beard Foundation. “Our interpretation allows the predominant natural flavors of the food to come through. If you combine too many flavors, you’ve disguised the food and you’ve confused the palette,” Peter says. “We showcase the food, not a complicated preparation, so our guests authentically taste the lettuce organically grown locally; they authentically enjoy our wonderful local tomatoes.”
