The chefs at Hyatt Regency Maui Resort & Spa’s award-winning restaurant, Japengo, have cooked up some new dishes and have carefully integrated them into the restaurant’s menu, which features many classic crowd favorites. From the signature Blackened Ahi Roll to the new Chirashi Don, the options are abundant.

“Good food can help create many memories,” said Japengo’s chef de cuisine, Gevin Utrillo. “Just the smell or taste of particular ingredients can transport someone back to a different time and place. At Japengo, we have the opportunity to be a part of our guests’ special moments. With our signature entrees and pupus, we strive to take loyal diners back to the day they first tried the dish. We are also very excited for our new items and hope that they will be at the heart of new memories,” Utrillo continued.

Recently introduced menu items include Chirashi Don featuring 12 assorted pieces of fish hand-selected by chef over sushi rice; Japengo Poke with Hanbun rice, ahi, lobster, ogo, Maui onion, avocado, tamari, bubu arare and gochujang aioli; and Grilled Chicken Satay with citrus-soy glaze, green papaya salad and macadamia nuts.

Frequent diners will still recognize some of their tried and true favorites on the menu such as the Blackened Ahi Roll, which features crab, avocado and cucumber on the inside and blackened ahi, spicy mayo, Maui onion ponzu and wasabi tobiko on the outside; or the Curry Dusted Calamari with harusame noodles, chukka salad and sweet grapes.

Located off of Hyatt Regency Maui’s lobby, Japengo offers a modern coastal ambiance, ocean views, and an outdoor patio overlooking the resort’s waterfalls and Ka’anapali Beach. It is open nightly featuring dinner and sushi bar service from 5:30 p.m. to 9:30 p.m., lounge service from 5:00 p.m. to 10:00 p.m., and happy hour from 5:00 p.m. to 6:00 p.m. Self-parking is complimentary.
