As Chef/Owner of the celebrated Hali’imaile General Store, Joe’s and Gannon’s, Bev Gannon is a culinary force to be reckoned with! Serving as the award-winning Corporate Chef for Hawaiian Airlines (1999-2010) and being recognized as the Hawaii State Small Business Person of the Year in 2008, Bev proves that her considerable talents also go way beyond the kitchen.
Chef Bev is one of the original founding members of the Hawai‘i Regional Cuisine movement, which elevated dining in Hawai‘i to an art form in the 1990s, and is the mainstay of a culinary movement that strengthens each year. The HRC movement established the school of thought to use fresh, locally grown and raised ingredients in island menus, rather than importing products from elsewhere.
In 25 years as a professional chef on Maui, Bev Gannon has taken the HRC concept and evolved it into a personal style of cooking influenced by her extensive travels and working relationships with the next generation of talented chefs. In each of her restaurant menus, Bev introduces diners to the incredible bounty of produce, fish and meats of Hawai‘i while exposing them to a global showcase of seasonings and sauces blended into a harmonious fusion of flavors.
