PENNY’S CHICKEN & GARLIC PENNE
compliments of Penny’s Pizza & Pasta
INGREDIENTS:
Cooked PENNE Pasta 8 OZ
Garlic Cream Sauce 4 OZ
Chicken, diced 5 OZ
Sauteed Mushrooms To Taste
Parmesan Cheese 1 OZ.
Chopped Italian Parsley 1/4 OZ.
Garlic knot 1 Piece
GARLIC CREAM SAUCE:
2 TBSP Butter
2.5 TBSP Flour
1 Cup MILK
2 TBSP shredded Parmesan Cheese
2 TBSP Minced Garlic
Salt & Pepper to taste
Sweat onions over medium heat in a pot for 3-4 minutes. Add butter. When butter has melted, add garlic. Stir for another minute or two then add flour and cook over low-med heat until it smells lightly nutty (4-5 minutes). Gradually add milk while whisking to prevent clumping. Add parmesan cheese, stir and bring to a low boil, stirring constantly. Lower heat and simmer until thickened, but no flour texture. Remove from heat then blend until smooth.
METHOD:
Place penne into strainer drop strainer into hot water for 1 minute. Pull strainer from water. Place 4 Oz cream sauce into a saute pan add chicken. Toss penne into saute pan with chicken and sauce. Place penne with chicken and sauce into a large white bowl. Sprinkle pasta with 1 TBSP parmesan cheese and ltsp chopped parsley.Place garlic knot on top of the plate as shown.
